Daniel’s passion for wine and hospitality started when he was a kid in Calabria, South of Italy. Food and table etiquette were very important at home and sometimes a sip of wine was allowed, inspiring his refined palate of today. Daniel was raised tasting the rich flavours of genuine Italian food and classic homemade dishes.
Growing up, Daniel fell in love with the hospitality industry. His uncle had a restaurant in Germany and his father spent a good part of his life working in a restaurant in Boston and their stories compelled Daniel to pursue a career serving people at the highest level.
At school, Daniel became particularly interested in Italian history. He couldn’t resist learning more about the Italian culture, art, music, politics, religions, languages and influences. Eager to learn even more, Daniel started travelling around Italy region by region, town by town. Tasting the food, the wine and the peculiar feeling of every beautiful city. Learning the concept and sense of hospitality related to the emotion given by each vineyard and its products as well as all the historical, artistic, environmental, gastronomic and traditional peculiarities of the territory in which they are produced.
Daniel feels that Italian wines are special because inside of each bottle, there is a sense of the symbiotic bond that traditionally links the wines and the peculiarities of the territory and the viticultural landscape they belong to.
At the age of 14, Daniel started his career in hospitality as a waiter. Seeing people’s eyes light-up as a result of great customer service combined with delicious food and the perfect wine pairing was fascinating to him. It only made sense for him to pursue further education in Italian wines and become a sommelier. For him, being a sommelier is not only a profession, but his mission to create special moments and for caring of others. He often refers to it as “Ospitalita’ Italiana” (Italian Hospitality).
Daniel’s dedication to learn Italian history so deeply, combined with his high level qualifications in Italian wines makes him the ultimate Italian sommelier, right here in Sydney.
