If you’re looking for a complex expression of the classic Pinot Grigio, you found it! 

This wine is a Pinot Grigio that does not fear time but keeps evolving to express better its processing in the cellar which involves malolactic fermentation (transformation of malic acid into lactic) making the wine creamy and round. Fermentation of this wine is separated 50% in stainless steel tanks and 50% in wooden barrels. They are then combined in March every year. In the same way, you can perceive the quality of the fruit harvested at various vineyards near the village of St. Michael (400 – 430 m) with exposure to south and southeast from a limestone gravel soil.

This is certainly a wine that denotes a certain level of complexity, from its intense colour to the mature notes on the nose. In the mouth, this wine is enveloping due to its processing, but at the same time, the acidity helps to balance the alcohol making it easy to drink.

Tasting

The wine is pale yellow with a slight green shimmer. On the nose, the aroma is complex and displays ripe fruits such as pear and green apple with honeydew melon. On the palate, the wine is smooth, creamy with elevated acidity and alcohol.

Food pairing

Pairs well with more elaborate dishes of international cuisine such as Chinese and Thai, but also with lasagnette, seafood risotto and soft cheeses.
