2015 Apollonio Mani del Sud Copertino DOP

• 6 bottle of 2015 Apollonio Mani del Sud Copertino DOP

The best thing about tasting wine is discovering new things, isn’t it? For instance, this particular appellation with this sensational bottle!

This wine incorporates a level of complexity for its processing that starts with traditional fermentation methods at a controlled temperature (27-28 degrees), carried out in large Slavonian oak vats, followed by a long stay of the must on the skins (about 30 days). This way, it extracts as much polyphenolic substances as possible and facilitates the start of the subsequent malolactic fermentation in barriques. This wine is certainly not afraid to show its robustness!

We would recommend this wine for those who like full-bodied wines like the Argentinian Malbec.

Fantastic wine with a bit of age. Great structure and the development of tertiary aromas add more complexity to this wine. Apollonio Copertino blend is a clear expression of the potential age-ability of this grape variety.
